The Tenuta Cavalier Pepe estate covers 70 hectares of vineyards, flanked by olive groves and hazelnut trees, cultivated in harmony with the natural balance of the land. The grapes are harvested by hand and carefully selected, then vinified mainly in temperature-controlled steel tanks. The great reds are aged in barriques and large French and Slavonian oak barrels, before completing their maturation in cement. Alongside the wood, clay and ceramic amphorae are also used, capable of ensuring delicate micro-oxygenation without woody interference.
