The Extra Dry Prosecco "Rive di Collalto" is an extraordinary interpretation of this prestigious "cru" from the Valdobbiadene area, more precisely located near the village of Susesana. In fact, this Riva, which in Veneto identifies a particular plot endowed with a characteristic terroir, is distinguished by a steep and morainic territory, characterized by limestone and clays that emerge on the surface. This plot belongs, along with another 1100 hectares, to the Borgoluce winery, an extraordinary green space that hosts cattle and buffalo farming as well as immense expanses of woods, vineyards, and meadows. The goal of the Collalto and Giustiani families, owners of this heritage, is to preserve the integrity of nature. Eco-sustainable methods with the least environmental impact are therefore adopted; it is no coincidence that the estate is self-sustaining from an energy point of view through the use of photovoltaic systems. The vineyards flourish in different areas and surround the majestic castle of San Salvatore. The Rive of Collalto, named after the historic owners, every year produces high-quality Glera grapes that allow for the creation of unique labels, just like this Extra Dry, a liquid testament to the freshness of the green hills of Valdobbiadene.

The vines of the "Rive di Collalto" Extra Dry from Borgoluce, exposed on the west side, climb between 200 and 300 meters in height and are trained using the sylvoz system and the "double inverted" method. The grapes are harvested slightly before their full ripeness to preserve all their freshness. In the winery, the destemmed grapes are gently pressed and ferment briefly in steel. The second fermentation takes place at low temperatures in autoclaves according to the Charmat method, where the wine remains to refine for another 5 months on the fine lees.

The "Rive di Collalto" Extra Dry Prosecco presents itself visually with a very light color reminiscent of a yellow-green hue and features a fine and persistent foam. On the olfactory examination, it reveals a very delicate bouquet, intertwining fruity fragrances of
